In all of my blog finding, subscribing and reading I have come across this really cool concept of “carnival blogging.” If you are a veteran blogger and made it past that sentence I applaud you because I know this post started off really boring to you! But if you are just starting to get your feet wet in blog land (like me) then the Carnival blog concept is something that may just help you. I have found and started following a ton of amazing blogs and am beginning to recognize certain bloggers “names” and writing styles even, and I do attribute that to the massive amounts of time I spend browsing blogs. So in an effort to cut back on my simple key word google searching for blogs of interest I am going to start participating in a few Blog Carnivals that interest me and perhaps make a few online pals along the way.

So as you see below I jumped on the Meal Plan Monday carnival. Today’s wild ride will be on the Summer Recipe Edition at Works for Me Wednesday.

One of my all time favorite Summer Recipes has to be the ever so popular, tons of rave reviews, never any left over ridiculously simple:

Dorito Taco Salad:


1 pound ground beef
1 packet of favorite taco seasoning
1 1#bag of salad mix (or make your own whatever you perfer)
Fat Free Ceasar Italian Dressing (I use Kraft)
Nacho Cheese Doritos
Shredded Cheese
Sour cream etc…

Cook the beef and follow the taco seasoning packet’s directions on how to combine. Put to the side. IN large bowl mix your salad (lettuce, tomato, carrots, cabbage,you know whatever you like in salad) Slowly pour in the dressing and combine with your hands until the salad is well coated but not drenched. Add the seasoned ground beef, some shredded cheese and then crumble doritos and mix in. (I prob use about 1/4 of a family size bag of doritos as my family likes the crunch) Serve with a dollop of sour cream if you like.

  1. >we had that for dinner last night! I grew up on this and I realized last night that my favorite part of this salad really is the kidney beans my mom always threw in. I LOVE kidney beans, but mostly just in this salad.
