Well last week I managed to make 3 dinners from the 5 I had planned (accounting for 2 already planned for eating out events). One of those missed nights turned into a leftovers and blue box mac n cheese night since I had forgotten to pull chicken out early enough in the day to get it thawed and prepped before we had to be at scouts. The other ended up a drive thru night after church (we go to our church’s 5pm Saturday service so we can leave the more popular Sunday mornings open for all the new comers) and a full day of scouting activities and house projects that left me too zapped. We all LOVED those pumpkin stuffed shells from last week– totally give them a try!
So on a positive note I already had 2 meals for this weeks plan (the 2 that fell off last week) which made it nice and easy.
It seems chicken is on sale everywhere this week so I will stock up, but try to use it sparingly this week since we will have a stockpile to dip into in the coming weeks and I don’t want to tire of it.

sounds delish Destiny! I am gonna scope out some quiche recipes… that one looks good but I am allergic to mushrooms…do you make your own pie crust or buy pre made ones??
I don’t like mushrooms so I leave them out
. I add bacon and use mediterranean herb feta and way less butter, like half the amount. Too much effort to make my own crust, do I buy them at trader joes. I also use regular dishes instead of deep dish, so this recipe makes 2!
